Mexican Rice Recipe
Arroz Verde | Green Rice
This delicious Mexican rice recipe, also known as arroz verde or green rice, gets its name from the addition of cilantro, a dark green leafy and pungent-smelling herb, used in a wide variety of our favorite spicy cuisines from Mexican to Thai. Cilantro, also known as coriander or Chinese parsley, is available in most major supermarkets. If your supermarket doesn't carry Texmati rice, substitute another long grain rice like basmati.
For arroz verde recipe you will need:1 cup Texmati rice 2 cups chicken or vegetable stock 1/2 cup fresh cilantro, finely chopped 1/4 cup chives, snipped 1 teaspoon lime rind, finely grated (optional) 1 tablespoon lime juice Salt and pepper to your taste
In a large saucepan over high heat, stir together rice and chicken stock; bring to a boil. Reduce heat; cover and simmer until rice is tender, about 15 minutes. Remove from heat; stir in cilantro, chives, lime rind (optional) and lime juice. Season with salt and pepper. Cover and let stand for 10 minutes before serving. This green rice recipe serves 6.
