Lemon-Dijon Asparagus

For lemon asparagus you will need: 2 pounds asparagus spears, trimmed 4 teaspoons extra virgin olive oil, divided 3 garlic cloves, minced 1 teaspoon grated lemon rind 2 tablespoons fresh lemon juice 1/2 teaspoon Dijon mustard Salt and freshly ground black pepper to taste Lemon wedges (optional) to garnish
How to roast asparagus:Preheat oven to 425°. In a large bowl, combine asparagus, 2 teaspoons olive oil, salt, and garlic. Toss well to coat. On a baking sheet (or two) arrange asparagus in a single layer. Bake for 12 minutes, or until crisp-tender.
In a small bowl add remaining 2 teaspoons oil, lemon juice and rind, mustard, and pepper. Whisk to combine. Arrange roast asparagus on a platter garnished with lemon wedges. Drizzle juice mixture over baked asparagus. This baked asparagus recipe serves 6.
