Baked Salmon Fillet Recipe



This appetizing baked salmon fillet recipe pairs fresh salmon with the Mediterranean flavors of extra-virgin olive oil, fresh rosemary and Kalamata olives.

For a deliciously simple dinner recipe serve this baked salmon with roasted asparagus and a crisp Chardonnay.

For this baked fish recipe you will need:

2 pounds ripe plum tomatoes stem ends trimmed, cut into thin wedges

1 small onion, peeled and cut into thin wedges

Grated zest of half an orange

2 cloves garlic, minced

1 tablespoon extra-virgin olive oil

˝ cup pitted Kalamata olives, coarsely chopped

1 tablespoon chopped fresh rosemary

Salt and freshly ground pepper to taste

4 salmon fillets (about 1 ˝ inches thick), skin removed

How to bake salmon:

Preheat oven to 400°F.

Trim stem ends of tomatoes and cut into wedges.

Peel onion and cut into wedges.

In a large roasting pan, combine tomatoes, onion, orange zest and garlic.

Drizzle with oil and toss to coat.

Roast, uncovered, stirring occasionally, until the tomatoes and onion are tender and beginning to brown on the edges, about 45 minutes.

Remove pan from the oven.

Increase oven temperature to 450°.

Add olives and rosemary to the pan; season with salt and pepper.

Clear a space for the salmon fillets and spoon some of the tomato mixture on top.

Bake 10 to 15 minutes, depending on the thickness, or until the salmon is opaque in the center.
