Beef Curry Recipe


The choice is yours--this versatile beef curry recipe can be made with lean or extra-lean ground round, ground chuck, or ground beef.

Start cooking the lentils first and once they are simmering, begin cooking the beef. We find that dried lentils work best in this easy beef curry recipe.

Cooking with lentils is simple and really doesn’t take much time—only about 30 minutes.

And considering the health benefits of this fiber-filled legume, it’s time well invested. It’s the fiber in lentils which helps lower cholesterol levels and prevents blood sugar levels from rising quickly after a meal.

Lentils combined with grated carrots and cauliflower in this spicy beef dish make for not only a quick easy dinner recipe but a healthy dinner recipe too.

For an even more filling dinner you could serve this simple curry recipe with a fragrant basmati rice.

For the curried beef recipe you will need:

4 teaspoons curry powder mild, medium or hot

¼ teaspoon EACH cayenne pepper and ground cumin

1 tablespoon vegetable oil

1 onion, diced

1 stalk celery, diced

1 cup small cauliflower florets

1 cup shredded carrot

1 garlic clove, minced

1 pound lean ground beef sirloin

½ teaspoon dried thyme

1 plum tomato, diced

1-½ cups cooked green lentils (See below)

3 tablespoon fresh lemon juice

Salt and freshly ground black pepper

Chopped fresh coriander to garnish


How to cook lentils:

Cook 2/3 cups dried green lentils at a simmer in 1-½ cups salted water until soft but not mushy. (About 30 minutes.)

How to cook curry:

In large deep skillet, toast curry powder, cayenne pepper, and cumin, over medium-high heat, until fragrant. (About 30 seconds.)

Stir in oil, onion, celery, cauliflower, carrot and garlic; cook, stirring, until beginning to brown. (About 3 minutes.)

Stir in ground beef and thyme, stirring up any browned bits from bottom of pan.

Cook, stirring to break up meat, until beef is browned and cooked through. (About 7 minutes.)

Stir in tomatoes and lentils; heat curried beef through.

Stir in lemon juice. Season to taste with salt and pepper.

Serve beef and lentil curry garnished with coriander.
