Cream of Broccoli Soup

For a healthier or low-fat soup, try this recipe for broccoli soup with milk or yogurt. For this easy cream of broccoli you will need:
2 cups broccoli, florets and peeled stems cut into chunks 3 cups chicken stock 1 clove garlic, peeled and cut in half 1 cup milk, cream or yogurt Salt and freshly ground black pepper to taste
In a medium saucepan add the chicken stock and the chopped broccoli. Simmer for about 10 minutes until the broccoli is tender. Cover the saucepan with a lid so that the chicken stock doesn't evaporate. During the last minute or so of cooking, add the garlic. Puree in a blender, in batches if necessary, until very smooth. Gradually stir in the milk, cream or yogurt. Reheat on a low to moderate heat. Do not boil or the soup will curdle. Season broccoli cream soup with salt and pepper. This broccoli soup recipe serves 4
