French Onion Soup Recipe

10 medium yellow onions, peeled and sliced 1/4 cup butter 1 tablespoon flour 1 bottle of pale ale 1 tablespoon Dijon mustard 4 cups beef broth, approximately 6 thick baguette slices, cut on the diagonal and toasted 2 cups sharp cheddar cheese, grated Salt and fresh ground black pepper to taste
In a large non-stick saucepan, brown the onions in the butter until golden and soft, about 30 minutes. Season with salt and pepper. Dust with the flour and cook for 1 more minute. Add the beer and bring to a boil, stirring constantly. Add the beef broth and bring to a boil. Reduce the heat and simmer for about 10 minutes. Add more broth if necessary. Adjust the seasoning. Preheat the broiler, first making sure the oven rack is in the middle position. Ladle the soup into 4 onion soup or ovenproof bowls and fit a slice of toasted baguette over each bowl. Top each toast with cheddar cheese. Place the bowls on a baking sheet. Broil until the cheese is golden brown. This recipe for French onion soup serves 6
