Grilled Balsamic Asparagus
The simplicity of grilled asparagus and balsamic vinegar combined will make this healthy side dish one of your favorites. And grilling asparagus is so easy to do.
To make this recipe for grilled asparagus you will need: 1 pound asparagus 3 tablespoons balsamic vinegar 2 tablespoons fresh lemon juice 1 tablespoon olive oil for marinade 1 tablespoon soy sauce Freshly ground black pepper Vegetable oil for grill 6-inch wooden skewers, soaked for 30 minutes
Snap off tough ends of asparagus. In a large zip-top plastic bag combine asparagus, vinegar, lemon juice, olive oil, soy sauce and pepper. Seal and marinate for 30 minutes. Remove asparagus from bag and discard marinade.
How to grill asparagus: If grilling outdoors set oiled rack 5 to 6 inches over glowing coals. One way to prevent the asparagus from falling through the grates of your outdoor grill is to make an asparagus raft.First, divide asparagus into 4 bunches. Align each bunch in a flat row and thread 2 skewers crosswise through each bunch. Place asparagus on oiled grill rack or ridged grill pan. Grill 3 to 5 minutes on each side or until asparagus is tender. This easy asparagus recipe serves 4.
