Salmon with Dill and Cucumber Salad
This grilled salmon recipe accents the classic combination of salmon and dill. Warm salmon is layered over a refreshingly cool pickled cucumber-dill salad. With the contrast between the iciness of the salad and richness of the warm salmon, you have a variety of tastes and textures in this easy salmon recipe.
For salmon with dill and cucumber salad recipe you will need: 2 large cucumbers 3 tablespoons rice-wine vinegar 1/2 cup fresh dill, chopped 1 teaspoon sugar 1 teaspoon salt 4 (5 ounce) salmon fillets, skin removed 1/4 teaspoon freshly ground black pepper
To make the cucumber salad recipe: Slice cucumbers into very thin rounds. In a medium-sized bowl place cucumbers with rice-wine vinegar, sugar, half of the dill, and 3/4 teaspoon salt. Toss to combine, and set aside.
How to cook salmon on the grill: Heat a grill or grill pan until very hot. Place salmon on a platter, sprinkle with remaining salt and pepper, and coat with remaining dill. Transfer to hot grill, and cook until nicely browned, approximately 3 to 5 minutes depending on the thickness of the salmon fillets. Flip salmon fillets over, and continue grilling another 3 to 5 minutes until just cooked through. Salmon texture will be flaky when cooked. Arrange pickled cucumbers on a serving platter, top with grilled salmon fillets, and serve. This recipe for grilled salmon serves 8
