Honey Carrots

A squirt of extra virgin olive oil and quality fragrant honey go a long way, working wonderfully with the natural sweetness of roasted carrots. One important tip is you do have to be especially mindful of the time the carrots are roasting in the oven, as you will find when you are cooking with honey that it burns relatively quickly. Honey roast carrots are a simple side dish which work well with many main entrees recipes. And they are elegant enough for holiday dinners, especially Easter dinner. Just be sure to make enough of them!
For this honey roasted carrot recipe you will need:4 large carrots, cut into thin sticks 2 tablespoons extra virgin olive oil 1 tablespoon honey Salt and freshly ground black pepper
Preheat the oven to 425 F. In a medium-size bowl, toss carrots with olive oil and honey. Spread carrots evenly on a rimmed baking sheet. Roast until tender and lightly browned, about 25 minutes. (see tip) Season with salt and pepper. This recipe for roasted vegetables serves 4
