King Ranch Chicken Recipe


This particular King Ranch Chicken Recipe calls for a can of Ro-Tel tomatoes (a mixture of fresh tomatoes and green chilies and spices). Ro-Tel is a popular brand often used in Tex-Mex recipes, but it's not available everywhere, so if you can't find it just substitute your regular brand of canned tomatoes-and-chiles.

Or add add your own zesty blend of seasonings to a couple of chopped fresh tomatoes-- a teaspoon of ground cumin, some diced jalapeno or diced chili peppers to taste.

King Ranch casserole is simple comfort food, and for some it conjures up memories of home and Mom's casserole dinners. Whether it brings back memories or it's something you've never tried before, if you're a fan of chicken casseroles, why not give this King Ranch chicken casserole a try?

You will need the following ingredients for this King Ranch recipe:

3 cups chicken, cooked and diced

12 corn tortillas, cut into quarters

1 large onion, chopped

1 large bell pepper, diced

2 cups of grated cheddar cheese (or 1 cup cheddar and 1 cup Monterey Jack)

1 can of cream of mushroom soup

1 can of cream of chicken soup

1 cup of chicken broth

1 can of Ro-Tel brand tomatoes (or other brand of diced tomatoes with green chilies)

1 tablespoon of chile powder

Optional garnishes: fresh cilantro, sour cream, pickled jalapeños

Preheat oven to 350 degrees.

In a large bowl combine chicken, onion, pepper, soups, chicken broth, tomatoes and chile powder.

In 13-by-9-by-2-inch casserole layer half the tortillas, then half of the chicken mixture, and half of the cheese.Repeat layers, ending with cheese.

Bake uncovered for half an hour or until brown and bubbling.
