Lamb Steak Recipe

Lamb Steaks with Lemon and Oregano

For this grilled lamb steak recipe, you'll need to marinate the meat for several hours, or overnight if you have the time.

We like the option of using vermouth in this Greek lamb recipe, because vermouth is flavored with herbs, and spices, and we think that adds even more flavor. But either way, with olive oil, lemon juice, garlic and oregano on the list of ingredients, you can’t go wrong with this simple marinade for lamb.

If you do choose to use a dry white wine in the lamb marinade instead of vermouth, be sure to choose a quality wine that you would also enjoy drinking!

For this simple Greek recipe you will need:

6 lamb steaks, cut 1 inch thick

½ cup dry white wine or vermouth

3 tablespoons lemon juice

¼ cup olive oil

2 garlic cloves, minced

1 teaspoon oregano

Salt and freshly ground black pepper to your taste

1 lemon cut in wedges


Trim any extra fat from the meat.

Mix together the wine or vermouth, lemon juice, oil, garlic, oregano, salt and pepper.

Place lamb steaks in a large shallow dish, pour the marinade over them and turn to coat meat well.

Cover and chill, marinating several hours or overnight, turning occasionally.

Broil or barbecue lamb steak over medium-hot coals, turning meat once, and basting with remaining marinade.

Allow 15 minutes for rare steaks.

Garnish grilled lamb steak with lemon wedges.
