Lentil Soup Recipe: Faki

And not only is this a delicious vegetarian recipe, this satisfying Greek lentil soup only uses 3 tablespoons of olive oil, making it a low-fat soup recipe too! For this easy lentil soup, you will need:
3 tablespoons olive oil 1 cup chopped onion 1 cup diced celery 1 medium carrot, peeled and diced 1 1/3 cups lentils, rinsed 8 cups water 1 (8-ounce) can tomatoes 2 bay leaves 4 cloves garlic, peeled and minced 1 teaspoon salt 1/2 teaspoon black pepper 3 tablespoons vinegar
In a 5-quart saucepan heat the olive oil over medium heat. Add the onion, celery and carrot; saute 5 minutes. Stir in the lentils and water. Bring to a boil, reduce the heat and simmer 1 hour. Break up the tomatoes and add to the lentil soup with their juice, the bay leaves and garlic; simmer 45 minutes to 1 hour. Season with the salt and pepper. Stir in the vinegar and serve.
