Marinated Grilled Shrimp
We tasted this marinated grilled shrimp at a summer party a few years ago and we were hooked at the first bite of one of these easy party appetizers. We weren’t the only ones who left the party with this marinated shrimp recipe, that evening, and it seems we’ve been making these shrimp appetizer recipes ever since. We usually make the shrimp marinade just as it is written here, but once in a while we punch up the cayenne a tiny bit, or substitute ketchup, or chili sauce, for the tomato sauce depending on what we have on hand. For this shrimp sauce recipe you will need: 3 cloves garlic, minced 1/3 cup olive oil 1/4 cup tomato sauce 2 tablespoons red wine vinegar 2 tablespoons chopped fresh basil 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 2 pounds fresh shrimp, peeled and deveined Skewers, if made of wood, soak them in water for at least half an hour so they don’t burn
In a large bowl, combine the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and mix until coated with seasonings. Cover shrimp mixture and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the top. Discard leftover shrimp marinade. Lightly oil grill grate. Cook shrimp skewers on preheated grill for 2 to 3 minutes per side, or until opaque This easy shrimp recipe serves 6.
