Orzo Salad Recipe


Toasting the orzo first in this orzo salad recipe gives the dish a nutty flavor. Toasted pecans add taste and crunch to this healthy salad, but you could skip them altogether if you are looking for a budget recipe.

For orzo salad you will need:

1-1/2 cups orzo

1 cup pecans, chopped

1 sweet green pepper, finely chopped

1/2 cup fresh basil, finely shredded

3 tablespoon red wine vinegar

3 tablespoon extra-virgin olive oil

3 garlic cloves, minced

6 grape tomatoes, halved

Salt and pepper to your taste



In skillet, toast orzo over medium heat, stirring often, until light brown, about 5 minutes; set aside.

In same skillet, toast pecans over medium heat, stirring often, until golden, 2 to 3 minutes; set aside.

In saucepan of boiling salted water, cook toasted orzo until tender but firm, about 7 minutes; add green pepper and cook for 20 seconds.

Drain and rinse under cold water; drain well and transfer to large bowl.

Add pecans, basil, grape tomatoes, vinegar, oil, garlic, salt and pepper. Toss well.

This orzo recipe serves 4.
