Pineapple Chicken Recipe


This pineapple chicken recipe is low in fat, high in protein.

It's a delicious chicken recipe that has undertones of caramel and ginger.

Serve it over a bed of noodles or rice.


For this simple chicken recipe you will need:

19 ounce can pineapple chunks

2 tablespoons cornstarch

1 tablespoon peanut or vegetable oil

4 skinless, boneless chicken breasts sliced into thin strips

1/4 cup white vinegar

3 tablespoons granulated sugar

3/4 cup chicken broth or bouillon

1 tablespoon fresh ginger, grated

1/2 teaspoon hot red pepper flakes (optional)

4 sliced green onions


Into a bowl, drain juice from the can of pineapple chunks.

Stir in cornstarch until dissolved.

In a large frying pan, or wok, heat oil over medium-high heat until hot.

Add chicken strips and stirfry until golden (about 3 minutes).

Remove chicken and set aside.

To the frying pan or wok, add vinegar and sugar.

Stir until the sugar dissolves and liquid turns golden (about 2 1/2 minutes).

Add chicken broth or bouillon

Stir in pineapple juice mixture, drained pineapple, ginger, red pepper flakes.

Stir frequently until the liquid loses its cloudy appearance (about 3 minutes).

Add chicken and its juices, and onions.

Stir until hot, (about 3 to 5 minutes).

Add salt and freshly ground black pepper to taste.

This pineapple chicken serves 4.
