Pork Stew Recipe

Pork Stew with Leeks



Enjoy this simple pork stew recipe which combines the flavors of garlic, onions and pork with leeks.

It’s a healthy dinner recipe too! Leeks are packed with iron and calcium making this nutritious stew recipe especially suitable for a winter's meal. In fact as far back as the Middle Ages, people ate leeks to help prevent colds.

Be sure to choose leeks with crisp, dark green leaves.

As for how to clean leeks: slice them lengthwise and wash them well to remove the grit and sand from between the layers.

For pork stew with leeks you will need:

2 pounds boneless pork, cut into 1 ˝ inch cubes

1 tablespoon butter

1 medium onion, finely chopped

2 garlic cloves, minced

Salt and pepper to your taste

1 tablespoon tomato paste

1 cup beef stock

1 bunch leeks (3 to 4)


Using a dutch oven or frying pan, brown meat in butter on all sides.

Add onion and sauté until golden brown.

Add garlic, salt and pepper to taste, tomato paste, and stock; cover and simmer 1 hour.

Cut leeks in half lengthwise and wash them thoroughly, then cut into ˝ inch pieces.

Add to meat and continue cooking 30 minutes longer, or until meat is tender. If necessary, boil down pan juices until reduced and slightly thickened.
