Recipe for Pork Tenderloin
Roast Pork with Pears and Caramelized Onions
An aromatic recipe for pork tenderloin which combines the saltiness of pork with the sweetness of pears and caramelized onions. Pork with pears is a magnificent combination but peaches could easily be substituted for pears in this tenderloin recipe and are just as delicious. Another good thing about this simple pork recipe is that it can be cooked entirely in one oven-proof skillet. For a healthy dinner serve the roast pork tenderloin with a healthy side dish of steamed green beans or carrots.
For this roast pork recipe you will need:1 tablespoon olive oil 2 pork tenderloins, trimmed (1 pound total) salt and freshly ground black pepper to your taste 2 tablespoons butter 2 pears, peeled, halved and cored 1 cup pearl onions, peeled 1 teaspoon all-purpose flour 1 cup white wine 2 cups chicken stock 1 tablespoon fresh thyme, chopped
In heavy-bottomed oven-proof skillet over medium-high heat, heat oil. Season pork tenderloin with salt and pepper; add pork to skillet and sear 2 minutes each side. Place skillet in 400ºF oven 20 minutes or until pork tender loin is cooked through; transfer to large plate and tent with tin foil. In same skillet over medium-high heat, melt butter; add pear halves, cut side down, and cook 5 minutes or until golden. Remove pears from skillet; add onions and cook 5 minutes or until browned. Sprinkle onions with flour and remaining salt and pepper; cook 1 minute. Add white wine, scraping bottom of pan to loosen caramelized pieces. Reduce liquid until almost fully evaporated; add stock and thyme. Cook, stirring occasionally, 10 minutes or until onions are tender. Return pears to skillet and warm through. Slice pork. Arrange roast pork, pears and onions on plate and serve drizzled with jus. This pork tenderloin recipe serves 4 to 6.
