Asparagus Parmigiano
This roasted asparagus recipe or parmesan asparagus is such a delicious and simple side dish. Asparagus and cheese are the main ingredients but you could even skip the cheese altogether and spike up the flavor with a hit of freshly cracked black pepper. Or substitute a grated parmesan, crumbled feta, or goat cheese. Whatever you decide, we hope you enjoy it!
For this easy asparagus recipe you will need: 2 pounds asparagus tips (trimmed) Extra virgin olive oil Coarse salt to taste Parmigiano-Reggiano cheese, cut into slivers
How to roast asparagus Preheat oven to 450°F. Arrange the asparagus in a single layer on a baking sheet. (You will need 2 baking sheets if the asparagus stalks are thick.) Drizzle olive oil over asparagus and season with salt. Toss gently to coat. Bake until asparagus is tender, about 10 minutes. Place roast asparagus on serving platter, shower with shards of parmigiano reggiano cheese and serve. This recipe for roasted asparagus serves 6.
