Wassail Recipe



This wassail recipe can serve a crowd. Serve it in a heat-proof punch bowl which has been preheated in the oven.

For wassail you will need:

3 large cooking apples cored

16 cups apple cider

6 whole cloves

6 whole allspice

2 teaspoons ground nutmeg

6 ounce can frozen lemonade concentrate

6 ounce can frozen orange juice concentrate

1 cup packed brown sugar (plus sugar for tops of apples)

Short cinnamon sticks



Preheat oven to 350 F

Cut apples in half crosswise and place cut side down, in 13 x 9 baking dish.

Bake 25 minutes or until the apple halves are fork-tender.

Meanwhile, in a covered 6-quart saucepot over low heat, simmer 2 cups apple cider, cloves, allspice and nutmeg 10 minutes.

Add remaining apple cider, undiluted lemonade and orange juice concentrates and brown sugar; heat until hot, but not boiling, stirring occasionally.

Pour hot cider mixture from saucepot into large punch bowl.

Float apples, skin side up, in punch; sprinkle tops with a little sugar.

To serve, ladle about ½ cup of the hot punch into each punch cup; add a short cinnamon stick to each serving.

This punch recipe makes 18 cups, or 36 half-cup servings.
